Try these brilliantly easy and flavoursome low-carb wraps.
Serves 4 | Preparation time: 15mins
200g ahia™ freshly smoked gemfish
6-8 large iceberg or romaine lettuce leaves
1 cup hummus
1 avocado, peeled & sliced
½ cucumber, thinly sliced
2-3 radishes, thinly sliced
1 cup bean sprouts
garlic aioli or sweet chilli sauce
Rest ahia™ freshly smoked gemfish at room temperature for 5 minutes, remove skin and bones and use a fork to flake the fish, set aside.
Arrange 3-4 large washed and drained lettuce leaves on a sushi mat or large piece of baking paper to form a rectangle approximately 20cm x 25cm.
Place 2-3 tablespoons of the hummus in a line down the centre. Using half of the remaining ingredients, top with flaked smoked fish and layers of avocado, cucumber, radish and bean sprouts. Finish with another spoonful of hummus.
Carefully fold in the edges of the lettuce leaves, and use the baking paper or sushi mat as a guide to tightly roll the lettuce up. Tuck stray leaves into sides to encase filling. Continue to roll and keep everything tight.
When the lettuce is completely rolled, wrap a piece of unbleached baking paper around the outside of the lettuce. Secure with toothpicks or kitchen string. Use a serrated knife to slice through the centre at an angle. Repeat for the second wrap.
Serve immediately or cover and chill until desired. Serve with aioli or sweet chilli sauce and wedges of lemon.
Tips & variations
Any fresh seasonal vegetables can be used, such as thinly sliced carrots, microgreens, capsicums or cooked beetroot.
Use the same filling in a conventional flat bread wrap.
Use homemade chutney, thousand island sauce or siracha sauce for flavour variety.
